City Diary: Tesco to offer a taste of New York
The jury may still be out on the turnaround of Tesco’s UK supermarket business, but the retailer cannot be accused of a lack of effort in its search for new restaurant and café concepts to entice customers into its bigger stores. To a portfolio that already includes Giraffe, Decks, Harris + Hoole and Euphorium Bakery can now be added a “deli-diner” format called Fred’s Food Construction. The concept has been developed by Paul Goodale, former head of restaurants at Harrod’s, and Daniel Gestetner, the multimillionaire founder of Yoomoo frozen yoghurts. Fred’s, which has the strapline “subs you can trust”, will sell the sort of sandwiches and salads served at traditional New York delis such as Katz’s Delicatessen. https://www.thetimes.co.uk/article/city-diary-tesco-to-offer-a-taste-of-new-york-kj9fzqhmt60
Friday five-minute interview
M&C Report talks to Paul Goodale, co-founder of PizzaLuxe, the gourmet pizza concept and former director of restaurants at Harrods, about his best investment, his best business decision, and the best piece of advice he’s ever received. What is the most important action the industry can take to encourage the consumer? I believe that most consumers want to feel they are doing the “right thing” when they spend their money. In many instances, restaurants that have lead the way on the key themes of provenance, sustainability and local sourcing. However, we are not always very good at telling the story in a way that the consumer can readily understand. A simple, single voluntary code of practice might help - a kind of [...]
Paul Goodale leaves Harrods to focus on Pizzaluxe
Paul Goodale, director of restaurants and kitchens at iconic Knightsbridge department store Harrods, has left his position to concentrate on new opportunities, including the roll out of a gourmet pizza brand. He will continue to run his restaurant consultancy business Epicurean Holdings and focus on the expansion of PizzaLuxe, a gourmet pizza brand he owns together with his partner Laura Pabon. PizzaLuxe currently has one outlet at Westfield Stratford City and plans to open a second site at Trinity Kitchen in Leeds in mid-October. It is currently negotiating a [...]

So, what to expect in Pan Chai? Well, anything from sushi, sashimi and seaweed salads containing collagen, peanut and miso. But if that doesn’t float your boat, the South-east Asian affair also delivers glazed wagyu beef, soft shell crabs and sushi rolls [...]
Harrods signs Richard Corrigan and Galvin brothers
Harrods has begun 2012 with two high-profile restaurant signings for the department's Food Hall: the Galvin brothers and Richard Corrigan. First to open in March will be Galvin Demoiselle, the fifth London restaurant to be opened by Chris and Jeff Galvin. The 60-cover bistro restaurant, to be managed by Sara Galvin, wife of Chris, will focus on French cuisine, including a number of signature Galvin dishes such as confit pork cheeks and tarte tatin. Meanwhile, Richard Corrigan is set to open a new Bentley’s Oyster Bar & Grill outlet in the store’s Meat & Fish Hall in May, taking the space currently occupied by Harrods’ Sea Grill seafood restaurant. Taking its cue from the Bentley’s site just off Piccadilly, the 25-cover restaurant will include a crustacean [...]
